Amatriciana-Style Chorizo Fettuccine
with Goat Cheese & Rocket

Golden chorizo, meets saucy chilli sugo and al dente fettuccine in our amatriciana-style pasta number. If that doesn't get you salivating, the crumble of marinated goat cheese will have you coming back for seconds (and thirds!).

- Half-fill a large saucepan with water, add a generous pinch of salt, then bring to the boil over high heat.
- Cook fettuccine in boiling water, stirring occasionally, until ‘al dente’, 11 minutes.
- Reserve pasta water (1/2 cup for 2 people / 1 cup for 4 people). Drain fettuccine, then return to saucepan. Drizzle with olive oil if needed.
- Meanwhile, halve snacking tomatoes. Finely chop brown onion (see ingredients). Roughly chop mild chorizo.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook onion and chorizo, tossing, until golden, 4-6 minutes.
- Add tomatoes and Nan's special seasoning and cook, until fragrant, 1 minute.
- Reduce heat to medium, and stir in tomato sugo, a pinch of chilli flakes (if using) and the reserved pasta water, and simmer until slightly reduced 1-2 minutes.
- Remove from heat, and add cooked fettuccine, tossing to combine. Season to taste.
TIP: Add a splash more water if the pasta looks dry.
- In a medium bowl, combine a drizzle of balsamic vinegar and olive oil. Season with salt and pepper.
- Add rocket and toss to coat.
- Divide amatriciana-style chorizo fettuccine between bowls. Crumble over marinated goat cheese. Drizzle over oil from goat cheese. Top with dressed rocket. Enjoy!
