These wholemeal pizza bases are topped with a vibrant palette of rich tomato reds, glossy Serrano ham, a smattering of green basil and Mozzarella. This is pizza as the Italian’s intended it – simple, with the quality ingredients speaking for themselves!

red onion

olive oil

balsamic vinegar
Preheat the oven to 200°C/180°C fan-forced. Finely slice the red onion. Grate the Mozzarella cheese. Pick the basil leaves and roughly chop 1/2 of the leaves.
Combine the tomato paste, olive oil, Italian herbs and balsamic vinegar in a small bowl. Season to taste with a pinch of salt and pepper.
Lay the wholemeal pizza base on a flat surface, rough side down. Spread the tomato paste mixture evenly across the base using the back of a spoon.
Sprinkle over the red onion and the grated Mozzarella cheese. Top with pieces of Serrano ham and the chopped basil.
Place the pizza into the oven directly on top of the wire racks. Cook for 10 minutes, or until the base is golden and the cheese has melted. Cut into wedges. TIP: Ditching the baking tray and placing the pizza directly on the wire racks brings direct heat to the base and gives your pizza that authentic pizza oven finish.
Divide the speedy Serrano ham and Mozzarella pizza between plates and top with the remaining basil.
