Cooking Steps

Bake the fries
1

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries.
• Place on a lined oven tray. Drizzle with olive oil and
toss to coat.
• Bake until tender, 20-25 minutes.
• Remove fries from oven, then sprinkle with chicken
salt and toss to coat.

TIP: If your oven tray is crowded, divide between two
trays.

Pickle the oninon
2

• Meanwhile, thinly slice red onion (see ingredients).
• In a medium bowl, combine the vinegar and a good
pinch of sugar and salt.
• Add onion to pickling liquid. Add enough water to
just cover onion. Set aside.

Little cooks: Don your goggles and have a go at peeling off the onion’s outer layer!

Make the tzatziki
3

• Finely chop garlic.
• Grate cucumber and squeeze out any excess
moisture using a paper towel.
• In a large frying pan, heat a drizzle of olive oil over
medium-high heat.
• Cook garlic until fragrant, 1 minute.
• Transfer garlic oil to a small heatproof bowl, then
add Greek-style yoghurt and grated cucumber.
Stir to combine.
• Season to taste with salt and pepper.

Prep the flatbreads
4

• In a second medium bowl, combine pork mince and
Mediterranean seasoning.
• Spread pork mixture evenly over one side of each
flatbread.

Cook the flatbreads
5

• Return frying pan to high heat with a drizzle of olive
oil. Cook flatbreads, meat-side down, until golden
and cooked through, 4-5 minutes.

TIP: Cook the flatbreads in batches if your pan is getting
crowded.

Finish & serve
6

• Drain onion.
• Divide smashed Greek pork flatbreads between
plates. Top each flatbread with some spiced fries,
pickled onion and mixed salad leaves. Drizzle with
tzatziki and crumble over fetta cubes.
• Serve with remaining fries. Enjoy!

Little cooks: Add the finishing touch and help crumble
over the fetta!
