Enjoy this delectable roast beef sirloin tip, whipped up in a quick and easy 4-steps and paired with a few staple sides (potato fries and tomato salad to be precise). • Preheat oven to 220°C/200°C fan-forced. In a large frying pan, heat a drizzle of olive oil over high heat. • Season premium sirloin tip all over and add to hot pan. Sear until browned, 1 minute on both sides. • Transfer to a lined oven tray and roast for 17-22 minutes for medium or until cooked to your liking. • Remove from oven and cover with foil to rest for 10 minutes.
TIP: The meat will keep cooking as it rests!

• Meanwhile, cut potato into fries. Place on a second lined oven tray. • Season with a pinch of salt, drizzle with olive oil and toss to coat. • Bake until tender, 25-30 minutes.
TIP: If your oven tray is crowded, divide between two trays.

• While beef is resting, slice tomato into wedges. • In a large bowl combine tomato, mixed salad leaves, a drizzle of olive oil and vinegar. Season to taste.

• Slice beef. • Divide roast beef sirloin tip, fries and tomato salad between plates. • Serve with mustard mayo. Enjoy!
