Cooking Steps

• Thinly slice cucumber into half-moons. • Halve snacking tomatoes. In a medium bowl, combine chicken tenderloins, peri-peri seasoning and a drizzle of olive oil.

• Slice bake-at-home ciabatta in half lengthways. Toast or grill ciabatta to your liking. • In a medium heatproof bowl, microwave garlic paste and the butter in 10 second bursts, until melted and fragrant. Season with salt and pepper. • Roughly chop toasted ciabatta then add to bowl with garlic butter. Toss to coat.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook chicken tenderloins until browned and cooked through, 3-4 minutes each side. Transfer to a plate. • In a large bowl, combine dill & parsley mayonnaise and a drizzle of vinegar. Add gourmet leaves, cucumber, snacking tomatoes and garlic croutons and toss to combine. Season. TIP: Chicken is cooked through when it is no longer pink inside. TIP: Cover the pan with a lid if the kernels are “popping” out. 

Finish & serve

• Divide garlic crouton salad between bowls. • Top with peri-peri chicken to serve. Enjoy!
