Cooking Steps

Make the potato salad

• Boil the kettle. Cut potato into bite-sized chunks. • Fill a medium saucepan with the boiled water. Add potato and a pinch of salt. Cook over high heat until easily pierced with a fork, 12-15 minutes. • Drain potato, then return to saucepan. Add the butter and ranch dressing, tossing to coat. Season with salt and pepper to taste.

Cook the corn & beef

• Meanwhile, drain sweetcorn. In a medium bowl, combine beef rump and all-American spice blend.
• Heat a large frying pan over high heat. Cook corn kernels until lightly browned, 4-5 minutes. Transfer to a large bowl.
• Return pan to medium-high heat with a drizzle of olive oil.
• When oil is hot, cook the beef for 3-4 minutes each side for medium-rare, or until cooked to your liking. In the last minute of cook time, add Peri Peri sauce, turning to coat.
TIP: Cover the pan with a lid if the kernels are “popping” out.

Make the slaw

• While the beef is cooking, roughly chop baby spinach leaves. • Add spinach, shredded cabbage mix, mayonnaise and a drizzle of olive oil to the bowl with the charred corn. Toss to combine. Season to taste.

Finish & serve

• Slice the beef. • Divide beef, ranch potato salad and charred corn slaw between plates. Enjoy!
