• Trim end of baby cos hearts and separate leaves.
• Thinly slice cucumber into rounds.
• Roughly chop kalamata olives, capers, semi-dried tomatoes and bacon.
• Cut or tear sliced sourdough (see ingredients) into bite-sized chunks.

• In a small bowl, combine mustard mayo and a splash of water.

• In a large frying pan, heat a generous drizzle of olive oil over medium-high heat.
• Cook sourdough chunks and bacon until golden and slightly crispy, 5-6 minutes.

• Build salad in serving bowls by layering with some cos leaves, cucumber, olives,
capers, semi-dried tomatoes, Parmesan cheese, bacon and croutons.
• Drizzle with mustard mayo and tear over parsley.
• Repeat layers with remaining ingredients. Sprinkle over flaked almonds
to serve. Enjoy!
