Cooking Steps

Bake the wedges

  • Preheat oven to 240°C/220°C fan-forced.
  • Cut potato into wedges.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes

TIP: If your oven tray is crowded, divide between two trays.

Pickle the onion

  • Meanwhile, thinly slice red onion (see ingredients). 
  • In a small bowl, combine the white wine vinegar and a good pinch of sugar and salt.
  • Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.
Get prepped

  • Finely chop garlic.
  • Slice tomato into wedges.
  • Thinly slice cucumber into sticks.
  • Cut haloumi into 1cm-thick slices.
  • In a medium bowl, combine haloumi with a pinch of garlic & herb seasoning, dried oregano (see ingredients) and a drizzle of olive oil.
Cook the haloumi

  •  In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook haloumi until golden brown, 1-2 minutes each side.
Bake the wraps

  • In a small bowl, combine garlic, olive oil (1/4 cup for 2 people / 1/2 cup for 4 people) and a pinch of salt and pepper.
  • Spread mini flour tortillas out evenly on second lined oven tray (don’t worry if they overlap) and brush or spread with some garlic oil.
  • Bake until golden, 5-10 minutes.
Finish & serve

  • Drain pickled onion.
  • Bring everything to the table.
  • Build your own plate with Greek-style haloumi, wraps, wedges, pickled onion, tomato, cucumber, mixed salad leaves, fetta cubes and dill & parsley mayonnaise. Enjoy!
