• Preheat oven to 240°C/220°C fan-forced. Cut potato, carrot and zucchini into bite-sized chunks. Cut beetroot into 1cm chunks. • Place on lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Roast until tender, 25-30 minutes. • In the last 5 minutes of cook time, remove veggies from oven. Sprinkle with grated Parmesan cheese and bake until golden and crispy. Set aside to cool slightly.

TIP: If your oven tray is crowded, divide between two trays.

• Meanwhile, in a medium bowl, combine beef & pork mince, Mediterranean seasoning, fine breadcrumbs, the egg and a pinch of pepper. • Using damp hands, roll heaped spoonfuls of mixture into small meatballs (4-5 per person). Transfer to a plate.

• Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook garlic until fragrant, 1 minute. Transfer to a small bowl. • Add Greek-style yoghurt and basil pesto to garlic oil mixture and combine. Season to taste.

• Return frying pan over medium-high heat with a drizzle of olive oil. • Add meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).
