Cooking Steps

Steam the greens

  • Cut carrot into sticks. Trim green beans.
  • Add prepped veggies and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave veggies on high until just tender, 2-4 minutes.
  • Drain, then return to the bowl and cover to keep warm.
Cook the chicken

  • Season chicken thigh on both sides.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. 
  • Cook chicken thigh, turning occasionally, until browned and cooked through, 10-14 minutes.
  • Remove from heat. Add sweet & savoury glaze, tossing to coat.

TIP: Chicken is cooked through when it's no longer pink inside.

Make the polenta

  • In a medium saucepan, combine the water and milk and bring to the boil over high heat.
  • Reduce heat to medium and slowly whisk in polenta, then cook, stirring, until smooth and thickened, 2-3 minutes.
  • Remove from the heat, add the butter,  half the Parmesan cheese and the salt, stirring until well combined. Season with pepper.
Finish & serve

  • Divide creamy polenta, steamed greens and glazed chicken medallions between plates.
  • Spoon over any remaining glaze from pan to serve.
  • Garnish with the remaining Parmesan cheese and serve with rocket. Enjoy!
