- Preheat oven to 240°C/220°C fan-forced.
- Slice zucchini into thick rounds. Cut tomato into thin wedges. Place on a lined oven tray.
- Drizzle with olive oil, sprinkle over half of the garlic & herb seasoning and toss to coat. Bake/roast until just tender, 15-20 minutes.
- Finely chop garlic.
- Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook mushrooms, until browned and softened, 6-8 minutes.
- In the last minute, stir in garlic. Season with salt and a generous amount of pepper.
- Heat a medium saucepan over medium heat. Add the butter and plain flour and cook, stirring, until a thin paste forms, 1 minute.
- Remove pan from heat, then slowly whisk in the milk. Whisk until smooth. Stir in remaining garlic & herb seasoning and season with salt.
- Place the lareg wraps directly on the wire racks.
- Spread white sauce evenly across large wraps using the back of a spoon.
- Top with mushrooms, then sprinkle over shredded mozzarella.
- Transfer wire rack to oven. Bake until cheese is melted and golden, 6-8 minutes.
TIP: Baking the pizza directly on the wire rack helps the base to crisp up. Place an oven tray underneath the wire rack to catch any drips!
- In a medium bowl, combine rocket, zucchini and tomato and a drizzle of olive oil and vinegar. Season to taste.
- Cut pizzas into even slices.
- Divide fun-guy garlic & truffle mushroom pizzas between plates. Drizzle with truffle oil and top with rocket & roast veg salad. Enjoy!
