Cooking Steps

  • Chop broccoli (including stalk!) into small florets.
  • Thinly slice brown onion into wedges.
  • Thinly slice carrot into half-moons

  • Boil the kettle. Half-fill a medium saucepan with boiling water.
  • Cook udon noodles over medium-high heat, gently stirring with a fork to separate, until tender, 1-2 minutes.
  • Drain, rinse and set aside.

  • Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Pat salmon dry with paper towel and season both sides.
  • In a medium bowl combine sweet soy seasoning and a drizzle of olive oil. Add salmon, gently turn to coat.
  • When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. 
  • Transfer to a plate, flake salmon into bite-sized chunks and set aside. Cover to keep warm.

TIP: Patting the skin dry helps it crisp up in the pan!

  • Wipe frying pan and return to medium-high heat with a generous drizzle of olive oil. When oil is hot, add broccoli, onion and carrot and cook, tossing, until softened, 5-6 minutes. 

TIP: Add a dash of water to the pan to help speed up the cooking process.

TIP: If your pan is getting crowded, cook in batches for the best results!

  • To the pan add cooked noodles, teriyaki sauce, the soy sauce, vinegar, sesame oil and a splash of water, tossing to combine, 1 minute. Season to taste.

  • Divide sticky teriyaki noodle stir-fry between bowls. Top with flaked salmon. Garnish with sesame seeds to serve. Enjoy!
