1 cup

¼ cup
vinegar (rice wine or white wine)
2 tbs
flour
(Contains: Gluten May be present: Wheat.)
1 piece
egg
(Contains: Eggs)

• Add the water to a medium saucepan and bring to
the boil.
• Add jasmine rice, stir, cover with a lid and reduce
heat to low.
• Cook for 10 minutes, then remove pan from heat
and keep covered until rice is tender and water is
absorbed, 10 minutes.
TIP: The rice will finish cooking in its own steam so don’t peek!

TIP: Slicing the veggies very thinly helps it pickle faster!

• In a shallow bowl, combine the plain flour and
a good pinch of salt. In a second shallow bowl,
whisk the egg. In a third shallow bowl, place panko
breadcrumbs (see ingredients).
• Cut Japanese tofu into 1cm pieces.
• Dip tofu into the flour mixture to coat, then into the
egg and finally into the breadcrumb mixture. Set
aside on a plate.

• Set air fryer to 200°C. Halve Bambino Brussels
sprouts, then place into a foil-lined air fryer basket.
Drizzle with olive oil, toss to coat, then cook until
browned and tender, 8-10 minutes.
• When sprouts have 2-3 minutes remaining, add
garlic stir-fry sauce and a squeeze of lime juice,
tossing to coat. Cook until browned and sticky.
TIP: No air fryer? In a large frying pan, heat a drizzle of
olive oil over medium-high heat. Cook sprouts, tossing
occasionally, until tender, 6-8 minutes. Remove from
heat and add garlic stir-fry sauce and a squeeze of lime juice, tossing to coat.

TIP: The chicken is cooked when it is no longer pink inside.
TIP: Add extra oil if needed so the tofu does not stick to the pan.

• Slice chicken.
• Drain pickles.
• Divide rice between bowls. Top with crumbed tofu,
sticky Bambino Brussels sprouts and chilli pickles.
• Drizzle over sesame dressing.
• Tear over coriander and serve with any remaining
lime wedges. Enjoy!
