Cooking Steps

1
1

• Preheat oven to 240°C/220°C fan-forced. • Cut potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil and toss to coat. • Bake until tender, 20-25 minutes. • Remove from over and sprinkle over chicken salt. Toss to coat.

TIP: If your oven tray is crowded, divide fries between two trays.

2
2

• Meanwhile, roughly chop tomato, baby spinach leaves and cucumber.

3
3

• Heat a large frying pan over high heat. • Cook corn kernels until lightly browned, 4-5 minutes. Transfer to a medium bowl and set aside.

TIP: Cover the pan with a lid if the kernels are “popping” out.

4
4

• When the fries have 10 minutes remaining, return the frying pan to high heat. • Cook beef mince and diced bacon (no need for oil!), breaking up bacon with a spoon, until just browned, 3-4 minutes. • Add Aussie spice blend, and cook until fragrant, 1 minute. • Remove from heat and add BBQ sauce and a splash of water, tossing to coat.

5
5

• To the bowl with corn, add tomato, baby spinach leaves and a drizzle of white wine vinegar and olive oil. Season to taste.

6
6

• Divide fries between plates. • Top fries with Aussie BBQ beef, bacon, Cheddar cheese and zingy corn salsa. • Drizzle over dill & parsley mayonnaise to serve. Enjoy!

Little cooks: Load up the fries and add the condiments!

Review summary

Updated on Feb 2026
  • Flavour: Many enjoyed the tasty BBQ flavours, though some found it a bit salty. Several suggested corn would enhance the dish over cucumber.
  • Ease of prep: Quick and simple to prepare, with some finding it fun for the whole family to assemble.
  • Suggestions: Try air frying the chips for extra crunch. Some preferred cooking the tomato and spinach with the mince.
  • Leftovers: Versatile leftovers worked well reheated or repurposed into burgers the next day.
  • Portions: Several found the serving size small, particularly wanting more chips to balance the toppings.
