- Boil the kettle. Half-fill a large saucepan with boiling water, then add a generous pinch of salt.
- Peel potato and cut into large chunks.
- Cook in the boiling water over high heat until easily pierced with a fork, 12-15 minutes. Drain and return to the pan.
- Add the paprika spice blend and mash until smooth and allow to cool.
- Meanwhile, thinly slice red apple into wedges.
- Thinly slice red radish.
- Slice lemon into wedges.
- Finely chop garlic.
- Cut bacon into 1cm pieces.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook bacon until golden, 5-6 minutes. Transfer to a paper towel-lined plate and allow to cool.
- To pan with mashed potato add the garlic, bacon, shredded mozzarella and generous pinch of salt and pepper. Stir until well combined.
- Shape potato mixture into 2cm x 7cm thick oval croquetas (roughly 6 per person).
- In a shallow bowl, place the plain flour. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs. Dip croquetas into flour mixture to coat, then into egg and finally into breadcrumbs. Set aside on a plate.
- Return frying pan to medium-high heat with enough olive oil to coat the base.
- When oil is hot, cook croquetas in batches, turning occasionally, until golden 2-4 minutes.. Transfer to a paper towel-lined plate.
- In a large bowl combine gourmet leaf mix, apple, radish, a drizzle of olive oil and a squeeze of lemon juice. Season to taste.
- Divide bacon croquetas and crisp gourmet leaf salad between plates. Serve with smokey aioli and lemon wedges. Enjoy!
