• Finely chop garlic and brown onion (see ingredients). • Finely chop celery. • Grate carrot (see ingredients).
Little cooks: Don your goggles and have a go at the peeling off the onion's outer layer! Older kids can help grate the carrot under adult supervision.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook garlic, onion, carrot, celery and a pinch of salt, stirring, until slightly softened, 2-3 minutes. • Increase heat to high. Add pork mince and cook, breaking up with a spoon, until just browned, 3-4 minutes. • Remove from heat. Add kecap manis (see ingredients) and the soy sauce, stirring, until just combined, 1 minute. Season to taste.
• Microwave mini flour tortillas on a plate in 10 second bursts until warmed through.
Little cooks: Pop some oven gloves on and help warm the tortillas under adult supervision. Be careful, the plate can get hot!
• Spread a layer of garlic aioli over each tortilla. • Top with salad leaves and sweet soy pork. • Sprinkle with crispy shallots to serve. Enjoy!
