- Half-fill a large saucepan with water, add a generous pinch of salt, then bring to the boil over high heat.
- Cook spaghetti in boiling water until ‘al dente’, 9 minutes.
- Reserve pasta water (1 cup for 2 people / 2 cups for 4 people).
- Drain spaghetti, then return to saucepan and drizzle with olive oil.
- Meanwhile, thinly slice garlic and brown onion (see ingredients). Roughly chop semi-dried tomatoes. Cut chicken breast into 2cm chunks.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook chicken and onion until golden, 5-6 minutes.
- Add capers, semi-dried tomatoes and garlic and cook, until fragrant, 1 minute.
TIP: Capers have a strong flavour, use less if desired.
- Reduce heat to low, then add cream cheese and the reserved pasta water, stirring until smooth and combined, 2-3 minutes.
- Remove pan from heat and stir through cooked spaghetti, until combined. Season to taste.
TIP: If the pasta is dry, add a splash of water and stir through.
- In a medium bowl, combine a drizzle of balsamic vinegar and olive oil. Season with salt and pepper.
- Add rocket, tossing to coat.
- Divide chicken, caper and cream cheese spaghetti between bowls. Top with Parmesan cheese and dressed rocket. Enjoy!
