• Heat olive oil in a frying pan over medium-high heat • Cook pork and seasoning, until cooked through, 3-4 mins each side • Transfer to plate, cover and rest for5 mins • Meanwhile, finely chop chives. Chop tomato and cucumber.
• Prick a few holes in potato packet. Microwave until soft and steaming, 4-5 mins • Meanwhile, return pan to medium-low heat with a drizzle of oil. Add cream and chives and cook until slightly reduced, 1-2 mins • Remove pan from heat and stir through cheese.
• In a bowl, combine tomato, cucumber, salad leaves and dressing. Season • Plate up potato, pork and salad • Spoon sauce over pork to serve
