Cooking Steps

Prep the fries

  • Preheat oven to 240°C/220°C fan-forced.
  • Cut potato into fries. 
Bake the fries

  • Place fries on a lined oven tray with mixed sesame seeds. Drizzle with olive oil, season with salt and toss to coat.
  • Bake fries until tender, 20-25 minutes. 

TIP: If your oven tray is crowded, divide the fries between two trays. 

Get prepped

  • Meanwhile, thinly slice cucumber into half-moons.
  • Slice lime into wedges.
Cook the salmon

  • When fries have 10 minutes remaining, pat salmon dry with paper towel and season both sides.
  • Heat a  large frying pan over high heat with a drizzle of olive oil. 
  • When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side.

TIP: Patting the skin dry helps it crisp up in the pan!

Toss the slaw

  • Meanwhile, in a medium bowl, combine slaw mix, cucumber, sweet chilli sauce, a good squeeze of lime juice and a drizzle of olive oil. Season to taste with salt and pepper.
Finish & serve

  • Divide salmon, sesame fries and zingy sweet chilli slaw between plates.
  • Serve soy sauce mix with dumplings.
  • Serve fries with garlic aioli and any remaining lime wedges.
  • Sprinkle over crispy shallots to serve. Enjoy!
