• Thinly slice cucumber into sticks. • Cut tomato into thin wedges. • In a small bowl, combine half the harissa paste and mayonnaise. Set aside.
ADAPT FOR KIDS: Keep it mild! Reserve half the mayo for the kid's portion.
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook chicken tenderloins until browned and cooked through (when no longer pink inside), 3-4 minutes each side. • Add paprika spice blend, and cook until fragrant, 1 minute. Remove from heat and stir in the honey.
• In a large bowl, combine mixed salad leaves, tomato, cucumber and balsamic vinaigrette dressing. Season to taste. • Microwave mini flourtortillas on a plate in 10 second bursts until warmed through.
• Plate up the kid's portion by spreading tortillas with the reserved mayo, then topping with some salad and Middle Eastern chicken. • Plate up the adult's portion by spreading tortillas with harissa mayo, then top with the remaining salad and Middle Eastern chicken. • Garnish with flaked almonds to serve.
