Juicy, perfectly seared beef rump is paired with crispy sweet potato fries and a fresh, crunchy cucumber salad to cut through the richness. Served with a velvety, herb-infused béarnaise sauce, it's all the satisfaction of your favourite pub feed without having to leave the couch. We’ve replaced the potato in this recipe with sweet potato due to local ingredient availability. It’ll be just as delicious, just follow your recipe card!

vinegar (balsamic or white wine)

Preheat oven to 240°C/220°C fan-forced.
• Cut sweet potato into fries.
• Place on a lined oven tray. Sprinkle with crispy
seasoning, drizzle with olive oil, season with salt
and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two
trays.

• Meanwhile, thinly slice red onion (see ingredients)
and cucumber.

• In a small bowl, combine the vinegar and a good
pinch of sugar and salt.
• Scrunch sliced onion in your hands, then add it
to pickling liquid. Add enough water to just cover
onion. Set aside.

• Season beef rump with salt and pepper.
• In a large frying pan, heat a drizzle of olive oil over
medium-high heat.
• When oil is hot, cook beef for 3-4 minutes each
side for medium-rare, or until cooked to your liking.
Transfer to a plate to rest.

• Drain pickled onion.
• In a large bowl, combine red butter lettuce,
cucumber, pickled onion and finger lime dressing.
Season to taste with salt and pepper.

• Slice steak.
• Divide pub-style beef rump, sweet potato fries and
zingy cucumber salad between plates.
• Serve with béarnaise sauce. Enjoy!
