The classic pairing of pear and Parmesan gets an upgrade with the addition of pine nuts and herbs. Finish it off with a drizzle of syrupy balsamic glaze.

Slice cucumber into half-moons. Thinly slice pear (see ingredients). Pick and thinly slice herb leaves (if using).
In a medium bowl, combine a drizzle of olive oil and a pinch of salt and pepper.
Add mixed leaves, cucumber, pear, grated Parmesan cheese and herbs to dressing. Toss to combine.
Transfer the pear and Parmesan green salad to a serving dish. Sprinkle with pine nuts and drizzle with some balsamic glaze.
