Cooking Steps

Cook the salmon and gnocchi

  • In a large frying pan, heat a generous drizzle of olive oil over medium-high heat.
  • When the oil is hot, fry gnocchi, tossing occasionally, until golden, 6-8 minutes. Transfer to a bowl.
  • Return pan to medium-high heat with a drizzle of olive oil. Pat salmon dry with paper towel and season both sides.
  • When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. Transfer to a plate. 

TIP: Patting the skin dry helps it crisp up in the pan!

TIP: Add extra oil if the gnocchi sticks to the pan.

  • Meanwhile, thinly slice pear into wedges.
  • Pick thyme leaves.
Make the sauce

  • Return frying pan to medium-high heat with a drizzle of olive oil. 
  • Add garlic paste and thyme and cook, until fragrant, 1 minute. 
  • Add herb & mushroom seasoning, light cooking cream and the water and cook, until slightly thickened, 1 minute. 
  • Return gnocchi to the pan and stir to combine. Season with pepper. 
Finish & serve

  • In a medium bowl combine rocket, pear, a drizzle of vinegar and olive oil. Season. 
  • Divide creamy thyme salmon gnocchi between bowls and top with salmon. Serve with rocket salad.
  • Tear over parsley. Sprinkle over pine nuts. Enjoy!
