
These golden mozzarella cauliflower bites are made for dunking straight into sticky chilli jam. Served alongside crunchy sweet potato fries and a fresh garden salad to cut through the gooey richness, this vegetarian bowl is pure comfort on a plate.

• Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into fries.
• Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide fries between two trays.

• When fries have 15 minutes remaining, place mozzarella cauliflower bites on a
second lined oven tray.
• Bake until browned and heated through, 10-15 minutes.

• While mozzarella bites are baking, roughly chop cucumber and halve snacking
tomatoes.
• In a medium bowl, combine gourmet leaf mix, cucumber, tomatoes and a
drizzle of olive oil and vinegar. Season to taste with salt and pepper.

• Divide sweet potato fries, mozzarella-cauli bites and garden salad between bowls.
• Serve with dill & parsley mayonnaise and chilli jam. Enjoy!
