- Preheat the oven to 200°C/180°C fan-forced (remove two wire racks first).
- Finely chop garlic. Thinly slice red onion (see ingredients).
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
- In the last minute, add garlic and a pinch of chilli flakes (if using).
- Place
the flatbreads directly on the wire racks. Using the back of a spoon, spread tomato paste evenly. Season with a pinch of salt and pepper.
- Top with cheddar cheese, cooked prawns and shredded mozzarella.
TIP: Placing the pizzas directly on the wire rack helps the base to crisp up.
- Bake the
pizza flatbreads for 8-10 minutes, or until the cheese is melted, bubbly, and starting to turn golden on the edges.
- Just before serving, in a medium bowl, combine rocket with a drizzle of olive oil and vinegar.
- Season
the pizzas with a good grind of black pepper and sprinkle over the remaining chilli flakes (if using).
- Top gamberi prawn pizza with dressed rocket. Enjoy!
