• Preheat oven to 240°C/220°C fan-forced. • Cut sweet potato into fries. • In a medium bowl, place haloumi and cover with water to soak. • Place fries on a lined oven tray. Drizzle with olive oil, season with pepper and toss to coat. • Bake until tender, 20-25 minutes. Little cooks: Help toss the fries! TIP: If your oven tray is crowded, divide the fries between two trays.
• When the fries have 10 minutes remaining, set your air fryer to 200°C. • Place crumbed basa into air fryer basket and cook, turning halfway, until golden and cooked through, 8-10 minutes. Cook in batches if needed. • Transfer to a paper towel-lined plate. Season with salt and pepper. • Drain haloumi and pat dry. Cut the haloumi into 1cm-thick slices.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook haloumi until golden brown, 1-2 minutes each side. Set aside on a paper towel-lined plate. TIP: No air fryer? Heat a large frying pan over medium-high heat with enough olive oil to coat the base. When oil is hot, cook crumbed basa until golden and cooked through, 2-3 minutes each side. Transfer to a paper towel-lined plate. Season with salt and pepper.
• While fish is cooking, finely chop garlic. Place the butter and garlic in a small microwave-safe bowl. Microwave in 10 second bursts, until fragrant. • Slice bake-at-home ciabatta in half lengthways. Spread garlic butter over ciabatta slices. • Place bake-at-home ciabatta directly on wire racks in the oven and bake until heated through, 3-5 minutes. • Meanwhile, slice tomato into thin rounds. • To the tray with sweet potato fries, sprinkle over chicken salt, tossing to coat. • Spread ciabatta bases with dill & parsley mayonnaise, then top with mixed salad leaves, crumbed basa, haloumi and tomato slices. • Serve with seasoned sweet potato fries.
