• Preheat oven to 240°C/220°C fan-forced.
• Place chopped potato on a lined oven tray.
• Season with salt, drizzle with olive oil, sprinkle over mixed sesame seeds and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide potato between two trays.

• When potatoes have 10 minutes remaining, heat a large frying pan with a drizzle of olive oil over medium-high heat. When oil is hot, cook prawn & ginger dumplings until starting to brown, 1-2 minutes.
• Add the water (watch out, it may spatter!), then cover with foil or a lid.
• Cook until the water has evaporated and dumplings are tender and heated through, 4-5 minutes.

• Meanwhile, drain sweetcorn.
• In a medium bowl, combine corn, slaw mix, baby spinach leaves, crunchy fried noodles, garlic aioli and a drizzle of vinegar. Season to taste.
• In a small bowl, combine sweet chilli sauce and soy sauce mix.

• Divide sesame potato chunks and crispy noodle slaw between plates.
• Top with prawn & ginger dumplings.
• Drizzle sweet chilli sauce mixture over dumplings.
• Tear over coriander to serve. Enjoy!
