Cooking Steps

1
  • Thinly slice capsicum into strips.
  • Combine hoisin sauce, the brown sugar, soy sauce and a dash of water in small bowl. Set aside.
Cook the stir-fry
2
  • In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef strips, in batches, until browned and cooked through, 1-2 minutes. Season, then transfer to a large bowl.
  • Return frying pan to medium-high heat with a drizzle of olive oil. Stir-fry capsicum and trimmed green beans, tossing, until tender, 4-5 minutes.
  • Add baby spinach leaves and ginger paste and cook until fragrant, 1 minute.
  • Transfer to bowl with beef, toss to combine and cover to keep warm.

TIP: Cooking the beef in batches over a high heat helps it stay tender

Cook the broccoli and cauliflower rice
3
  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • Cook broccoli and cauliflower rice until softened, 2-4 minutes. Season generously with salt and pepper.
4
  • Divide broccoli and cauliflower rice between bowls. Top with hoisin ginger beef and veggie stir-fry.
  • Garnish with pickled ginger and crushed peanuts to serve. Enjoy!
