• Boil the kettle.
• Chop broccoli (including stalk!) into small florets.
• Thinly slice brown onion into wedges.
• Thinly slice carrot into half-moons.

• Half-fill a medium saucepan with boiling water.
• Cook udon noodles over medium-high heat, gently
stirring with a fork to separate, until tender,
1-2 minutes.
• Drain, rinse and set aside.

• Meanwhile, pat salmon dry with paper towel and
season both sides with salt and pepper.
• In a medium bowl, combine sweet soy seasoning
and a drizzle of olive oil. Add salmon, gently turning
to coat.
• In a large frying pan, heat a drizzle of olive oil over
medium-high heat.
• When oil is hot, cook salmon, skin-side down first,
until just cooked through, 2-4 minutes each side.
• Transfer to a plate, flake salmon into bite-sized
chunks and set aside. Cover to keep warm.
TIP: Patting the skin dry helps it crisp up in the pan!

• Wipe out the frying pan, then return to medium-high
heat with a generous drizzle of olive oil.
• When oil is hot, cook broccoli, onion and carrot,
tossing, until softened, 5-6 minutes.
TIP: Add a dash of water to the pan to help speed up
the cooking process.
TIP: If your pan is getting crowded, cook in batches for
the best results!

• To the pan, add cooked noodles, teriyaki sauce,
the soy sauce, vinegar, sesame oil and a splash of
water, tossing to combine, 1 minute.
• Season to taste with salt and pepper.

• Divide teriyaki udon stir-fry between bowls.
• Top with sweet soy salmon.
• Sprinkle with sesame seeds (see ingredients) to
serve. Enjoy!
