- Preheat oven to 240°C/220°C fan-forced. Cut potatoes into bite-sized chunks.
- Place potato on a lined oven tray. Drizzle with olive oil, season with salt and pepper and toss to coat.
- Roast until tender, 20-25 minutes. Remove tray from oven and allow to cool slightly.
- Meanwhile, halve snacking tomatoes.
- Thinly slice cucumber.
- Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. In a medium bowl, combine chicken steaks, garlic and herb seasoning, a pinch of salt and pepper and a drizzle of olive oil.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook chicken steaks until cooked through, 3-6 minutes each side (cook in batches if your pan is getting crowded).
- Remove pan from heat, add the honey turning to coat.
TIP: The chicken is cooked when it is no longer pink inside.
- Meanwhile, in a large bowl, combine gourmet leaf mix, tomato, cucumber and roasted potatoes.
- Add a drizzle of olive oil and white wine vinegar. Season to taste.
- Divide tomato salad between plates. Top with Greek-style chicken and crumble over fetta cubes.
- Drizzle over garlic sauce to serve. Enjoy!
