Cooking Steps

• Boil the kettle. Half-fill a medium saucepan with boiling water, then add a generous pinch of salt. • Peel potato and cut into large chunks. • Cook potato in the boiling water, over high heat, until easily pierced with a fork, 12-15 minutes. Drain and return to the pan. • Add the butter and milk to potato and season with salt. Mash until smooth. Cover to keep warm.

TIP: Save time and get more fibre by leaving the potato unpeeled.

• Meanwhile, preheat grill to high. • Thinly slice celery and spring onion. • Thinly slice zucchini into half-moons. • Finely chop red onion. • Grate carrot. • Drain sweetcorn.

• In a large frying pan, heat a drizzle of olive oil over high heat. Add diced bacon, corn, celery, onion and zucchini and cook, tossing, until tender, 3-4 minutes. • Add carrot and cook, stirring, until softened, 2-3 minutes. • Reduce heat to medium, then add Nan's special seasoning and cook until fragrant, 1 minute.

• To pan with bacon, stir in light cooking cream, the salt and water. • Simmer until slightly reduced, 2-3 minutes. Season with pepper. • Remove from the heat and stir in baby spinach leaves, until wilted.

• Transfer bacon filling to a baking dish and evenly spread mash potato over the top. • Sprinkle over Cheddar cheese. • Grill pie until lightly golden, 8-10 minutes.

TIP: Grills cook fast, so keep an eye on the pie!

• Divide creamy bacon and loaded veggie pie between plates. • Sprinkle over spring onion to serve. Enjoy!
