Cooking Steps

  • Boil the kettle. Peel potato and cut into large chunks.
  • Thinly slice carrot and zucchini into sticks.

  • Half-fill a large saucepan with boiling water, then add a generous pinch of salt.
  • Cook potato in the boiling water for 6 minutes. Place a colander or steamer basket on top and add the prepped veggies.
  • Cover and steam until veggies are tender, and potatoes are easily pierced with a fork, for another 7-8 minutes.
  • Transfer veggies to a bowl. Season and cover to keep warm. Drain potatoes and return to saucepan. Add the milk, butter and a pinch of salt and mash until smooth.

  • In a large frying pan, heat enough olive oil to coat base over medium-high heat.
  • Cook plant-based crumbed chicken until golden and heated through, 2-3 minutes on each side.
  • Transfer to a paper towel-lined plate. Season with a pinch of paprika spice blend.

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil. Cook sliced mushrooms, until browned and softened, 6-8 minutes.

  • Reduce heat to medium, add Dijon mustard and light cooking cream and cook until slightly thickened, 1-2 minutes. Season to taste.

  • Slice chicken.
  • Divide plant-based crumbed chicken, mash and veggies between plates.
  • Spoon creamy mushroom Dijon sauce over chicken to serve. Enjoy!
