1 drizzle
white wine vinegar
Preheat the oven to 240°C/220°C fan forced. Cut the potato into bite-sized chunks. Place on a lined oven tray. Drizzle with olive oil, sprinkle over the chicken stock powder and season with pepper. Toss to coat, then roast until tender, 20-25 minutes.
While the potato is roasting, halve the cherry tomatoes. Cut the chicken drumstick fillet in half. In a medium bowl combine the All-American spice blend, the water and a drizzle of olive oil. Add the chicken, then season with pepper and turn to coat.
In a large frying pan, heat a drizzle of olive oil over a medium heat. Cook the chicken, turning occasionally, until browned and cooked through, 8-10 minutes. Remove from heat and add the honey, turning the chicken until well coated.
TIP: The spice blend will char slightly in the pan. This adds to the flavour!
TIP: Chicken is cooked through when it's no longer pink inside.
While the chicken is cooking, finely chop the chives. In a small bowl, combine the light sour cream and chives. Season with salt and pepper.
In a large bowl, combine a drizzle of white wine vinegar and olive oil. Season, then add the cherry tomatoes and mixed salad leaves. Toss to coat.
Divide the All-American honey chicken, roast potato and salad between plates. Spoon over juices from the pan over the chicken. Serve with a dollop of chive sour cream.
