Large Frying Pan

Cooking Steps

  • Preheat oven to 220°C/200°C fan-forced. 
  • Drain pineapple slices. 
  • Roughly chop sliced smoked ham. 
  • Using a vegetable peeler, peel carrot into ribbons.
Char the pineapple

  • Heat a large frying pan over high heat. Cook pineapple slices until lightly charred, 2-3 minutes each side.
  • Transfer to a chopping board and roughly chop.
Make the sauce

  • Return frying pan to medium-high heat with a drizzle of olive oil. Cook tomato paste, stirring, until fragrant, 1 minute. Stir in the water, then simmer until slightly thickened, 1 minute. Season with salt and pepper.

  • Lay flatbreads on a flat surface.
  • Spread tomato paste mixture evenly across flatbreads using the back of a spoon.
  • Top with ham and pineapple. Sprinkle over shredded mozzarella. 
Cook the pizzas

  • Transfer flatbread pizzas to oven wire racks. Bake until cheese is melted and golden, 10-12 minutes. Season.

TIP: Baking the pizza directly on the wire rack helps the base to crisp up.

TIP: Place an oven tray underneath the wire rack to catch any drips!

Finish & serve

  • Just before serving, in a medium bowl, combine mixed salad leaves, carrot ribbons and a drizzle of vinegar and olive oil. Season to taste.
  • Divide tropical double smoked ham and pineapple pizzas between plates. Serve with mixed leaf salad. Enjoy!
