This week, we've got spiced chicken tenders with garlic and herb potatoes and a side of lemony greens to complete this easy dish. Heads-up - you'll need a microwave for this recipe.

baby broccoli
1 bag
baby spinach leaves

Aussie spice blend
1 packet
chicken tenderloins
1 packet
roasted potatoes with garlic herb butter

smokey aioli
(Contains: Eggs; May be present: Milk.)

Trim baby broccoli. Cut lemon into wedges. Heat frying pan over medium-high heat. Add baby broccoli and a good dash of water, cook until tender, 4 mins. Add baby spinach and stir until wilted, 1-2 mins. Add a squeeze of lemon juice and season to taste. Transfer to a plate.

Meanwhile, combine spice blend and chicken in a bowl. Drizzle with olive oil and toss. Return frying pan to high heat with a drizzle of oil. Cook chicken until cooked through, 3-4 mins each side.

Prick a few holes in potato packet. Microwave potatoes until hot and steaming, 3 mins. Plate up chicken, greens and potatoes. Serve with smokey aioli and lemon wedges.
