- Boil the kettle. Place bean vermicelli noodles in a large heatproof bowl.
- Add enough boiling water to cover noodles. Cover and set aside until tender, 4-6 minutes.
- Drain, rinse and return to bowl with a drizzle of olive oil. Set aside and allow to cool slightly.
- Meanwhile, using a vegetable peeler, peel carrot into ribbons.
- Drain pineapple slices.
- Slice lemon into wedges.
- Thinly slice long chilli (if using).
- Heat a large frying pan over high heat. Cook pineapple slices until lightly charred, 2-3 minutes each side. Transfer to a chopping board and roughly chop.
- Return frying pan to medium-high heat with a drizzle of olive oil.
- When oil is hot, cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
- To the bowl with cooled noodles add shredded cabbage mix, carrot ribbons, charred pineapple, chilli, prawns, a squeeze of lemon juice, satay sauce and the soy sauce. Toss to combine and season to taste.
- Divide satay prawn noodle salad between bowls. Tear over coriander and sprinkle over crispy shallots. Serve with any remaining lemon wedges. Enjoy!
