Enjoy this delectable roast beef sirloin tip, whipped up in a quick and easy 4-steps and paired with a few staple sides (potato chunks and tomato salad to be precise). • Preheat oven to 240°C/220°C fan-forced. Cut potato into bite-sized chunks. • Spread potatoes over a large microwave-safe plate. Cover with a damp paper towel. Microwave potatoes on high, 3 minutes. Drain any excess liquid. • Place chopped potatoes on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Roast until tender, 10-15 minutes.

• See 'Top Steak Tips!' (below). In a large frying pan, heat a drizzle of olive oil over high heat. • Season premium sirloin tip all over and add to hot pan. Sear until browned, 1 minute on both sides. • Transfer beef to a second lined oven tray and roast for 17-22 minutes for medium or until cooked to your liking. • Remove from oven and cover with foil to rest for 10 minutes.
TIP: The meat will keep cooking as it rests!

• Meanwhile, roughly chop tomato. • In a large bowl, combine tomato, spinach & rocket mix, a drizzle of the vinegar and olive oil. Season to taste.

• Slice beef. • Divide roast beef sirloin and tomato salad between plates. • Serve with BBQ mayonnaise and potatoes on the side. Enjoy!
