• To a medium saucepan, add the water, a pinch of salt and bring to the boil. • Add basmati rice, stir, cover with a lid and reduce heat to low. • Cook for 10 minutes, then remove pan from heat and keep covered until rice is tender and water is absorbed, 10 minutes. TIP: The rice will finish cooking in its own steam so don't peek!
• Meanwhile, trim and halve green beans. Thinly slice spring onion. Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil over high heat. Cook broccoli & carrot mix and green beans, tossing, until softened, 5-6 minutes. Add garlic and cook, until fragrant, 1 minute. Transfer to serving bowls, season and cover to keep warm. TIP: Add a dash of water to the pan to help speed up the cooking process.
• When rice has 5 minutes remaining, in a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook veggie mince and sweet soyseasoning, breaking up with a spoon, until just browned, 4-5 minutes. • Reduce heat to medium. Return all veggie mince to pan and stir in sweet chilli sauce and low sodium soy sauce, until coated. Season to taste. TIP: Cooking the meat in batches over a high heat helps it stay tender.
• Stir the butter through rice. • Divide rice between bowls with garlic veggies. • Top rice with sizzling plant-based mince. • Sprinkle with spring onion and sesame seeds to serve. Enjoy!
