- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, sprinkle with Aussie spice blend, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, remove grapes from stem and roughly chop.
- Thinly slice brie.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook bacon, turning, until golden, 4-5 minutes.
- Transfer to a plate.
- Wipe out pan and return to medium-high heat with a drizzle of olive oil.
- Cook grapes, stirring regularly until blistered, 5-6 minutes.
- Reduce heat to medium. Add the balsamic vinegar, brown sugar and a good splash of water and mix well.
- Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl.
- Spread sliced sourdough with mustard mayo then fill with brie slices, bacon, grape jam and rocket.
- Heat toastie in a sandwich press for 2-3 minutes, until brie is melted.
- Divide grilled bacon, brie and grape jam toasties between plates.
- Serve with fries. Enjoy!
