Cooking Steps

Cook the penne
1

• Boil the kettle. 
• Half-fill a large saucepan with boiling water.  
Cook penne in boiling water over high-heat until  
‘al dente’, 12 minutes.
• Reserve some pasta water (see ingredients). 
• Drain penne, then return to saucepan.  


TIP: ‘Al dente’ pasta is cooked through but still slightly 
firm in the centre.

• Meanwhile, thinly slice pear into wedges. 
• Halve Bambino Brussels sprouts.
• Roughly chop brown onion (see ingredients) 
and bacon.
• Cut chicken breast into 2cm chunks.

Start the pasta

• In a large frying pan, heat a drizzle of olive oil over high heat.
• Cook bacon, chicken, onion and Brussels sprouts, tossing occasionally, until browned and cooked through (when chicken is no longer pink inside), 5-6 minutes.

Bring it all together

• Reduce heat to medium-low, then stir in light cooking cream, stock concentrate and the reserved pasta water and simmer until slightly thickened, 1-2 minutes.
• Remove pan from heat, then add cooked penne and 
basil pesto, tossing to coat.

Toss the salad

• In a medium bowl, combine rocket leaves, pear and 
a drizzle of vinegar and olive oil. 
• Season to taste with salt and pepper.

Finish & serve

• Divide basil pesto bacon chicken penne between bowls.
• Sprinkle with Parmesan cheese and a pinch of  chilli flakes (if using). 
• Top with pear salad to serve. Enjoy!
