• Drain mango slices in juice (see ingredients) and roughly chop. • Thinly slice mint leaves. • Roughly chop macadamias. • Zest lime and slice in half.

• In a large bowl or jug, whisk thickened cream and vanilla-flavoured syrup with electric beaters, until soft peaks form and almost doubled in size, 1-2 minutes. TIP: If you don‘t have electric beaters, use a hand whisk and whisk for 3-4 minutes.

TIP: Chill both your bowl and cream before whipping to produce a larger increase in volume.

NOTE: Make ahead: The cream can be whipped up to 1 day ahead. Tightly cover the bowl or transfer to an airtight container and refrigerate.

• Gently stir lime zest and lime juice (see ingredients) into the whipped cream.

• Break up meringue nests into large chunks, then arrange onto a serving platter.

• Dollop zesty cream around meringue chunks.

• Top with mixed berry compote, mango, macadamias and flaked almonds. • Garnish with mint to serve. Enjoy!
