
It wouldn’t be a Christmas feast without a delectable dessert and this modern take on a pavlova will tick all the boxes. With layers of crunchy meringue, mango slices, berry cream, zingy curd and nuts, tell your guests to save room for this marvellous treat that is oh-so-simple to whip up!

• Drain mango slices in juice (see ingredients) and roughly chop. • Thinly slice mint leaves. • Roughly chop macadamias. • Zest lime and slice in half.

• In a large bowl or jug, whisk thickened cream and vanilla-flavoured syrup with electric beaters, until soft peaks form and almost doubled in size, 1-2 minutes.
TIP: If you don‘t have electric beaters, use a hand whisk and whisk for 3-4 minutes. TIP: Chill both your bowl and cream before whipping to produce a larger increase in volume.

• Gently stir lime zest and lime juice (see ingredients) into the whipped cream.

• Break up meringue nests into large chunks, then arrange onto a serving platter.

• Dollop zesty cream around meringue chunks.

• Top with mixed berry compote, mango, macadamias and flaked almonds. • Garnish with mint to serve. Enjoy!
