Cooking Steps

Cook the rice
1
  • Boil the kettle. Half-fill a medium saucepan with boiling water.
  • Add jasmine rice and a pinch of salt and cook, uncovered, over high heat until tender, 12-14 minutes. Drain, rinse with warm water and set aside.
Get prepped
2
  • Meanwhile, thinly slice tomato and cucumber into rounds.
  • Thinly slice long chilli (if using).
  • Remove centre veins from makrut lime leaves, then very thinly slice.
  • Slice lemon into wedges.

TIP: The makrut lime leaves are fibrous, so you want to cut them into small pieces!

Fry the eggs
3
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes. Transfer to a plate and cover to keep warm.
Cook the prawns
4
  • When the rice is done, wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes (cook in batches if your pan is getting crowded).
Fry the rice
5
  • Add ginger paste, makrut, and tom yum paste and cook until fragrant, 1 minute.
  • Add cooked rice and the soy sauce, tossing until well combined, 1-2 minutes.
  • Remove pan from heat, then add a generous squeeze of lemon juice. Season to taste.
Finish & serve
6
  • Divide fragrant prawn tom yum fried rice between bowls.
  • Top with fried eggs. Serve with cucumber, tomato and any remaining lemon wedges.
  • Garnish with chilli and tear over coriander. Enjoy!
