Cooking Steps

1
1

• Finely shred baby cos lettuce. • Thinly slice cucumber into sticks. • Slice chicken breast into 1cm-thick strips.

2
2

• In a large frying pan, heat a drizzle of olive oil over high heat. • Cook chicken, tossing occasionally, until browned and cooked through, 3-4 minutes. Cook in batches if your pan is getting crowded. • Reduce heat to medium, and return all chicken to the pan, then stir in hoisin sauce, the soy sauce and a splash of water, until coated, 1 minute. Season with salt and pepper.

3
3

• Meanwhile, microwave mini flour tortillas on a plate in 10 second bursts until warmed through. • In a large bowl, combine cos lettuce, cucumber, half the garlic aioli and a drizzle of olive oil. Season to taste.

4
4

• Build tacos by filling with cucumber salad and hoisin chicken. Spoon over any remaining glaze from pan. Drizzle over the remaining aioli. Enjoy!

FANCIFY ME: if you've added a fancify bundle, thinly slice long chilli. Top tacos with sesame seeds and chilli. Tear over coriander.

Review summary

Updated on July 2026
  • Flavour: The hoisin chicken was a clear highlight, with many enjoying the saucy, Asian-inspired flavour. Some found it mild or felt the aioli clashed with the hoisin — skip it or reduce it if you prefer a cleaner flavour profile.
  • Ease of prep: This is a genuinely quick and easy weeknight meal that the whole family, including kids and teens, can help put together.
  • Suggestions: Adding pickled onion, avocado, tomato, or carrot helps bulk out the tacos and adds variety. Some reviewers also swapped cucumber for other vegetables, and one enjoyed roast pumpkin stirred through as a tasty addition.
  • Portions: Several reviewers found the chicken and tortillas insufficient, particularly for families of four or hungry teens — consider doubling the chicken or adding a side.
  • Leftovers: The tacos did not keep well assembled, so it is best to store components separately and build fresh when ready to eat.
