Cooking Steps

Cook the rice
1

• In a medium saucepan, add the water (for the rice) and bring to the boil. • Add basmati rice, stir, cover with a lid and reduce heat to low. • Cook for 10 minutes, then remove pan from heat and keep covered until rice is tender and water is absorbed, 10 minutes.

TIP: The rice will finish cooking in its own steam, so don't peek!

Start the chilli
2

• Meanwhile, drain sweetcorn. • Heat a large frying pan over high heat. Cook beef mince (no need for oil!) and soffritto mix, breaking up with a spoon, until just browned, 2-3 minutes. • Add corn and cook, tossing until softened, 4-5 minutes.

3

• Reduce heat to medium, then add garlic paste and savoury seasoning and cook until fragrant, 1 minute. • Stir in Worcestershire sauce, passata, the salt, butter, water (for the beef) and simmer until reduced, 2-3 minutes. • Remove from heat, then stir in baby spinach leaves, until combined. Season to taste with salt and pepper.

4

• Divide rice between bowls. • Top with homestyle beef and corn chilli. • Top with light sour cream to serve. Enjoy!
