It’s everything you love about a classic chicken caesar salad, made super fresh and speedy. This recipe is under 650kcal per serving.

• Finely chop garlic.
• Cut or tear bake-at-home ciabatta into bite-sized chunks.
• In a large frying pan, heat a drizzle of olive oil over high heat. Cook ciabatta,
tossing, until golden, 2-3 minutes.
• In the last minute, add the butter and garlic and cook until fragrant.
• Transfer to a bowl, season to taste with salt and pepper and set aside.

• Meanwhile, halve snacking tomatoes.
• Thinly slice cucumber into rounds. Roughly chop baby cos lettuce.
• Place your hand flat on top of chicken breast and slice through horizontally to
make two thin steaks.
• In a medium bowl, combine Aussie spice blend and a drizzle of olive oil. Add
chicken steaks, turning to coat.

• Return frying pan to high heat with a drizzle of olive oil.
• Cook chicken steaks until cooked through, 3-6 minutes each side (cook in
batches if your pan is getting crowded).
TIP: The chicken is cooked through when it is no longer pink inside.

• In a large bowl, combine cos, cucumber, tomatoes and Caesar dressing. Season
to taste.
• Slice chicken.
• Divide classic Caesar salad between plates.
• Top with spiced chicken and garlic croutons to serve. Enjoy!
