Cauliflower & Broccoli Rice Mix
• Finely chop garlic.
• Slice brown onion into thin wedges.
• Roughly chop Asian greens.
• In a small bowl, combine oyster sauce, the soy sauce, honey and water.
• In a large frying pan, heat a drizzle of olive oil over high heat.
• Cook half the garlic until fragrant, 1 minute.
• Add broccoli & cauliflower rice mix and cook, until softened, 2-4 minutes.
• Stir through mixed sesame seeds. Season to taste with salt and pepper.
• Transfer to a bowl and cover to keep warm.
• Wipe out frying pan, then return to medium-high heat with a drizzle of olive oil. Cook sliced mushrooms until softened, 2-3 minutes. Add onion and cook until softened, 4-5 minutes. Transfer to a plate.
• Return frying pan to high heat with a drizzle of olive oil. Cook pork mince, breaking it up with a spoon, until just browned, 3-4 minutes.
• Add Asian greens and remaining garlic and cook until wilted, 1 minute.
• Return mushrooms and onion to pan, then add oyster sauce mixture and the butter. Cook, stirring, until bubbling, 30 seconds.
• Divide sesame broccoli and cauli rice between bowls. Top with umami pork, mushroom and veggie stir-fry.
• Sprinkle over crispy shallots and a pinch of chilli flakes (if using) to serve. Enjoy!
