Cooking Steps

Roast the pumpkin

• See ‘Top Roast Tips!’ (below). Preheat oven to 
220°C/200°C fan-forced. 
• Slice pumpkin into thin wedges. 
• Place pumpkin wedges on a lined oven tray. 
• Drizzle with olive oil, sprinkle with Southeast Asian 
spice blend and season generously with salt and 
pepper. Toss to coat and arrange in a single layer. 
• Roast until golden and tender, 25-30 minutes. 
TIP: Peel the pumpkin, if you prefer! 

Prep the beef

• While the veggies are roasting, season premium 
sirloin tip all over with salt and pepper. 
• Heat a drizzle of olive oil in a large frying pan over 
a high heat. Sear beef until browned, 1 minute on 
all sides. 
• Spread mixed sesame seeds over a second lined 
oven tray. Using tongs, transfer beef to the tray, 
turning to coat in sesame seeds.

Roast the beef

• Roast beef for 15-20 minutes (for a 300g piece), 
17-22 minutes (for a 450g piece) or 18-23 minutes 
(for a 600g piece) for medium, or until cooked to 
your liking. Remove from the oven and cover with 
foil to rest for 10 minutes. 
TIP: The meat will keep cooking as it rests!  

Make the dressing

• While the beef is roasting, finely chop garlic. 
• Slice lime in half. 
• Wipe out frying pan and return to medium-high heat 
with sesame oil blend. Add ginger paste and garlic 
and cook until fragrant, 1 minute. 
• Transfer to a small bowl, then stir through sweet 
chilli sauce, crushed peanuts and a good squeeze 
of lime juice. Season to taste.

Make the salad

• Meanwhile, halve snacking tomatoes. 
• Trim pea pods and thinly slice lengthways. 
• Pick and thinly slice mint leaves. 
• In a large bowl, combine tomatoes, pea pods and 
mixed salad leaves. 
• Drizzle with olive oil and add a squeeze of lime 
juice. Toss to combine and season to taste.

Finish & serve

• Slice beef. 
• Divide spiced pumpkin and salad between plates. 
• Top with sesame roast beef. 
• Drizzle with peanut-ginger dressing. Sprinkle with 
mint and crispy shallots to serve. Enjoy!
