Cooking Steps

Bake the fries

• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Bake until tender, 20-25 minutes. • In the last 5 minutes of cook time, remove from oven, sprinkle with Cheddar cheese and bake until golden and crisp. TIP: If your oven tray is crowded, divide between two trays.

Get prepped & pickle the cucumber

• Meanwhile, thinly slice cucumber into rounds. • Pick mint leaves and finely chop. Thinly slice spring onion. • In a medium bowl, combine the vinegar and a good pinch of sugar and salt. • Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside. TIP: Slicing the cucumber very thinly helps it pickle faster!

Prep the patties

• In a large bowl, combine beef mince, Asian BBQ seasoning, fine breadcrumbs, the egg and a pinch of pepper. • Shape beef mixture into 2cm-thick patties (1 per person).

Cook the patties

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook beef patties until just cooked through, 5-6 minutes each side (cook in batches if your pan is getting crowded). • Remove pan from heat then add half the sweet chilli sauce, turning patties to coat.

Heat the buns & toss the slaw

• While patties are cooking, halve bake-at-home burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes. • To a medium bowl, add slaw mix, mint, spring onion, a splash of pickling liquid and a drizzle of olive oil. Toss to combine. Season.

Finish & serve

• Drain pickled cucumber. • Spread garlic aioli over bun bases. Top with slaw, some pickled cucumber and beef patties. • Serve with cheesy fries, remaining pickles and remaining sweet chilli sauce. Enjoy!
