beef strips

All-American spice blend
1 tin
sweetcorn

cucumber
1 bag
shredded red cabbage
1 packet
BBQ mayo

mini flour tortillas
1 packet
Cheddar cheese
1 packet
sour cream
1 bag
coriander
1 tub
garlic paste
½
lime
Olive Oil
Drain corn. Heat a drizzle of olive oil in a frying pan over high heat. Cook beef strips, garlic paste, spice blend and corn, tossing, until browned, 1-2 mins.
Chop tomato and cucumber. Cut lime into wedges. In a bowl, combine shredded cabbage, BBQ mayo and a generous squeeze of lime juice. Season and toss.
Microwave tortillas for 10 second bursts, until warmed through. Fill tortillas with slaw, beef, Cheddar, tomato and cucumber. Top with sour cream and torn coriander. Serve with extra lime wedges.
