  • Peel the mango and chop the flesh. Zest lemon to get a pinch then halve.
  • Strip the mint leaves. Reserve a few mint leaves for garnish.
  • Tip:  Freeze the fruit the day before so you can immediately make and eat the sorbets.
     
Blend the sorbet

  • Add the mango, mint, the juice of the lemon, lemon zest, half the sugar and 60 ml water to a large bowl.
  • Puree with a hand blender, blend or food processor until smooth.

Tip: If using frozen fruit and the blending is difficult, wait a moment for the fruit to soften slightly. Add a splash of warm water to speed up the process, if necessary.

Chill the sorbet

  • Add sorbet to freezer-safe bowls.
  • Chill in the freezer for at least 3 hours. Stir the sorbets every 30 minutes for the first 2 hours.

Tip: You can also chill the sorbets in the freezer overnight.

Finish & serve

  • Remove sorbet from the freezer 5 minutes before serving.
  • Use an ice cream scoop to scoop into bowls or ramekins. Garnish with the reserved mint leaves. Enjoy!
